Salbando is a soppressato--a dry, Italian style salami made with a course grind of pork, red and black pepper flakes, garlic and white wine.  It's aged about four weeks and although spicy is still subtle.  The spice makes itself apparent as you eat.

Nice on a sandwich with roasted veggies.  Sublime with scrambled eggs.
