This is Spain's most popular raw sheep's milk cheese.  It comes from Toledo in the La Mancha area where this artisanal version by the Corcuera Family produces a robust flavor using same-day milk from Manchega sheep. This is a hard cheese aged from 12 -14 months and is delicious drizzled with honey, served with crusty brick oven bread and walnuts.
