This raw sheep’s milk cheese has a smooth café au lait-shaded rind, medium moisture and a creamy texture. Think Manchego with a stronger flavor of roasted nuts. It is made from the milk of Castellanes and Churras Sheep grazing in Castille y Leon, Spain and is enticingly spicy and sweet with a wine finish.
