Tubby is an Alpine-style raw cows' milk cheese from Spring Brook Farm in Vermont. It's makers then send it to be aged for a year at a depth of 30 feet in the Crown Finish Caves in Brooklyn, N.Y., where it is regularly washed in brine. The result is a smooth paste with the pleasant fruity aromas of Granny Smith apples and buttermilk notes.
