Prufrock is made on Martha's Vineyard by Grey Barn, a sustainable, certified organic farm and dairy.  The milk comes from cows grazing on ocean-caressed grasses and the hand-made process includes a vegetarian rennet, a gentle brine bath and daily washing and flipping during the six-week aging process. All this attention produces a beautiful orange rind which embraces a soft gold paste --  delicious, semi-stinky, soft and luxurious, toasty, nutty, fruity... becoming a little saltier and more savory as it ages.  Compare it to coastal cheeses from Ireland and France but it definately is its own fromage!
