This is a full-bodied artisanal goat cheese that deserves respect... it comes from a small producer in Leon, Spain and is made exclusively with the pasteurized milk of just one herd, aged for three months and destined to make us happy.  Leonora brings a depth to the aged goat sphere--fresh and flaky, creamy and lemony with a beautiful, compact dense white paste and layers of complexity in its long finish.  Perfect anytime... drizzled with honey... dessert anyone?
