Dena Moran, Olde Hudson’s founder, has chosen a trio of cheeses she loves. They welcome you to her way of combining flavors and textures—a way that doesn’t always play by the old rules. She loves cheeses that, enjoyed by themselves, can cross-taste flavors and textures and when served together bring deep satisfaction.

Red Rock—a cows’ milk Wisconsin Cheddar studded with Blue Cheese spikes and aged for three to six months. It has a mild but savory tang.
Comté—a fruity/savory/sweet/salty raw cows' milk cheese, one of France’s most popular. Great on your cheese plate and save a bit for grating.
Leonora—a Spanish full-bodied pasteurized goat cheese. It is fresh and flaky, creamy and lemony with a dense white paste and a long complex finish.
