Bica is a Portuguese unpasteurized blend of cow, goat and sheep milk and its full name, Bica de Queijo, means "bag of cheese" which is exactly what it is ...when the curd is fresh it is placed in cheese cloth and twisted into a "bag."  Then when the cheese becomes firm, the cloth is removed but its imprint remains on this raw farmhouse cheese with a flavor that is distinctive mild and buttery with a satin-like texture and a slightly salty taste... maybe from the seaside breezes that blow over the pasture.

Best with a medium-bodied red wine before a meal or a glass of Port afterward.
