After we say that award-winning Cornish Yarg is the backward spelling of Gray, the name of the artisanal couple who developed it from a 13th century recipe, there is still more to say!  It's a pasteurized, cows' milk cheese from Cornwall--creamy and crumbly, citrusy, mushroomy, tangy and beautifully wrapped in the nettle leaves in which it ages. Nice with figs and a dry sherry... red pears and almonds and the lazy luxury of pomegranates.
