Woodsy, sweet, herbal and bright are some of the adjectives Jasper Hill uses to describe this creamy, bark-wrapped cheese. Named after a leader in the Greensboro, Vermont community from which this cheese hails, the 2/3-lb. wheel is wrapped in bark from the cheese makers own woodlands. When ripe, you can scoop this delicious cheese right out of its rind. Aged three to six weeks.
