Tomme Aux Fleurs is a rich and herbal classic tomme made with raw milk from cows grazing on Alpine meadow grasses. The cheese is semi-soft but assertive--mild, creamy, and somehow coyly robust. Sprinkled with mountain wildflowers, it is a celebration of its own high altitude terroir. Although made in Switzerland, it is aged across the border by award-winning French affineur Hervé Mons.
