Bica de Queijo means "bag of cheese" which is exactly what it is ...when the curd is fresh it is placed in cheese cloth and twisted into a "bag."  Then when the cheese becomes firm, the cloth is removed but its imprint remains on this raw farmhouse cheese made from a blend of cow, goat and sheep's milk.  Bica's flavor is a distinctive mild, buttery one with a satin-like texture and a slightly salty taste... maybe from the seaside breezes that blow over the pasture.

Best with a medium-bodied red wine before a meal or a glass of Port afterward.
