Chaumes, a semi-soft pasteurized cows' milk cheese from France's Périgord was first made in 1971 using a multi-step Trappist method that produces its washed orange exterior and its smooth and bendy texture. In the four weeks Chaumes takes to mature it develops the large, intense and nutty flavor that allows it to stand up to melting or grilling and be a perfect partner, with a simple cracker, for a BIG wine like a Bordeaux.
