A firm, pasteurized sheep's milk cheese from the Pyranees, Etorki, which means"origins" in Basque lives up to its name. Its makers follow traditional Basque  cheesemaking techniques using milk from local black-faced and red-faced Menach ewes and pressing, not cooking, the curds to produce a velvety texture and the caramel/hazelnut flavor characteristic of pressed cheese.
