Pecorino Moliterno Al Tartufo is a beautiful, firm raw sheep's milk cheese from Sardinia with wide veins of earthy truffle paste injected after the aging process has begun to enhance its aromatic strong sheep flavor. While aging, the rind is rubbed with olive oil and vinegar to produce a full-flavored, assertive cheese. It is best served with a big red wine, a peasant bread and good olives. Prego!
