This Raw, Austrian cows' milk cheese produced at the creamery Hofkäserei Kraus by cheesemaker Albert Kraus brings us blissful summer memories and the big, firm, smooth, rich, herbaceous, slightly sweet flavor that summer milk from happily grazing Austrian cows are proud to produce.

After six months it is transported to the Käeskuche cave in Bavaria to continue aging under a shower of dried Alpine edible flowers and herbs.
